For anyone seeking an authentic taste of Israeli culture, diving headfirst into an Israeli breakfast is an absolute must. Those who have experienced it will often tell you that the vibrant, diverse spreads are among their most cherished memories. No one quite masters the art of breakfast like the Israelis. Imagine tables laden with freshly baked bread, an array of egg dishes, an abundance of colorful salads, seasonal fruits, delicious baked goods, and, of course, the iconic SHAKSHUKA.

My admiration for traditional red shakshuka has been a recurring theme. It’s my trusted savory breakfast, a dish I often prepare to impress guests because it looks incredibly sophisticated yet is surprisingly easy to make. However, during my recent trip to Israel, my culinary horizons expanded dramatically when I was introduced to a groundbreaking concept: Green Shakshuka! This innovative twist on a classic blew my mind and instantly became a new favorite.

I had the distinct privilege of learning this extraordinary recipe directly from a talented Israeli chef who generously shared the intricate details of preparing the perfect green shakshuka. With her permission, I’m thrilled to share this recipe with you, confident that you’ll adore it as much as I do. It’s not just a meal; it’s an experience.

What is Green Shakshuka? A Fresh Take on a Classic

At its core, Green Shakshuka is a delectable dish featuring an abundance of sautéed greens and fresh herbs, crowned with perfectly poached eggs and often finished with a dollop of creamy yogurt. Unlike its traditional red counterpart, where eggs are poached in a rich tomato sauce, this version embraces the verdant flavors of the garden, with eggs gently cooked within a savory mixture of cooked leafy greens and aromatic herbs. It’s a lighter, fresher, and equally satisfying alternative that truly celebrates the power of plants.

Traditional shakshuka, renowned for its spiced tomato and pepper base, originates from North Africa but has become a beloved staple across various regions of the Middle East. Over recent years, Green Shakshuka has steadily gained popularity, making appearances on menus in many modern Middle Eastern restaurants, captivating diners with its unique appeal and vibrant flavor profile.

As a self-proclaimed veggie enthusiast, I find myself utterly captivated by any meal that radiates a bright, verdant hue. The moment I tasted Green Shakshuka in Israel, I was genuinely astonished. The original version I savored there was prepared with Mangold leaves, a local favorite. Since Mangold can be challenging to find outside the region, I’ve successfully adapted the recipe using readily available and equally delicious alternatives like fresh kale and beet leaves. The beauty of this Green Shakshuka recipe lies in its incredible versatility; it’s designed to be customized with whatever greens and herbs you have on hand, making it truly magical and adaptable to any season or preference.

Essential Ingredients for Your Green Shakshuka

Crafting the perfect Green Shakshuka begins with selecting fresh, high-quality ingredients. Here’s what you’ll need to gather:

  • Greens (6 cups packed): This is the star of the show! Think spinach, kale, Swiss chard, collard greens, beet leaves, or a mix of your favorites. Remember, they wilt down significantly, so you’ll need a generous amount to start with. Aim for fresh, vibrant leaves for the best flavor and texture.
  • Onion (1/2 large yellow onion, roughly chopped): Provides a sweet and savory base. Yellow onions are ideal for their balanced flavor.
  • Garlic (3 cloves, chopped finely): Essential for that signature garlicky depth. Always opt for fresh garlic cloves for superior taste.
  • Herbs (1/2 cup chopped parsley, 1/2 cup chopped dill): Fresh herbs elevate the flavor profile. Parsley and dill are traditional choices, but feel free to experiment with others like oregano, basil, or cilantro for unique aromatic notes.
  • Lemon (juice of 1/2 lemon): A squeeze of fresh lemon juice adds a bright, zesty finish that cuts through the richness of the greens and eggs.
  • Salt (1/2 tsp) and Pepper (1/4 tsp): Seasoning to taste. Adjust salt levels if you are monitoring sodium intake.
  • Large Eggs (5-6): The quantity depends on your pan size and how many servings you desire. Using the best quality eggs you can find will make a noticeable difference in flavor and yolk richness. Pasture-raised or local farm eggs are often exceptional choices.
  • Olive Oil or Butter (1 tbsp): For sautéing the aromatics and greens. Both add a wonderful richness.

Optional Enhancements for Extra Flavor:

  • Red Pepper Flakes: For a delightful kick of spice.
  • Paprika: Adds a subtle smokiness and warmth.
  • Yogurt: A dollop of plain Greek yogurt or labneh on top adds a creamy, tangy contrast.
  • Feta or Goat Cheese: Crumbled over the top, these cheeses offer a salty, tangy, and creamy dimension.

Crafting Your Perfect Green Shakshuka: Step-by-Step Guide

Making Green Shakshuka is a straightforward process that yields incredibly delicious results. Follow these simple steps for a perfect dish every time:

STEP 1: Sauté the Greens and Aromatics

Begin by heating 1 tablespoon of olive oil or butter in a large, wide skillet over medium heat. Once shimmering, add the roughly chopped yellow onion and sauté for about 3 minutes, or until it becomes soft and translucent. Next, stir in the finely chopped garlic and cook for an additional minute until fragrant. Do not let the garlic burn. Gradually add the packed greens and fresh herbs, one handful at a time, allowing them to slowly wilt down. It will seem like an overwhelming amount initially, but they will reduce significantly in volume. Once wilted, squeeze the fresh lemon juice over the greens and season generously with salt and pepper.

STEP 2: Poach the Eggs to Perfection

Once your greens are tender and well-seasoned, reduce the heat to low, bringing the mixture to a gentle simmer. Using the back of a spoon, create 5 to 6 distinct wells or indentations in the green mixture. Carefully crack one egg directly into each well, taking care to keep the whites and yolks intact. Cover the pan tightly with a lid or, if your skillet doesn’t have one, use a sheet of aluminum foil. Allow the eggs to poach for approximately 8 to 12 minutes, depending on your preferred level of doneness. For runny yolks, check after 8 minutes; for firmer yolks, continue cooking for a few more minutes.

STEP 3: Garnish and Serve Immediately

Once the eggs have reached your desired consistency, remove the pan from the heat. Now comes the fun part: adding your favorite toppings! Sprinkle with red pepper flakes for an extra kick, drizzle with zhug for an authentic Middle Eastern flavor, or add a dollop of creamy yogurt. Crumbled feta or goat cheese also makes a wonderful addition. Adjust salt and black pepper to taste. Serve your sensational Green Shakshuka immediately, preferably straight from the skillet, alongside warm pita bread or crusty artisan bread for dipping.

Delicious Pairings: What to Serve with Green Shakshuka

Green Shakshuka is a versatile dish that pairs beautifully with a variety of accompaniments, enhancing its flavors and making for a complete meal. While I often enjoy mine with a sprinkle of feta cheese and extra fresh parsley, here are some additional ideas to complete your culinary menu:

  • Spicy Drizzle: Elevate the heat with a generous drizzle of zhug, my favorite Yemeni hot sauce. Alternatively, a touch of harissa adds a lovely smoky and spicy depth.
  • For Dipping: Serve with warm, fluffy pita bread, or make your own crispy homemade pita chips for a satisfying crunch. Crusty sourdough or challah bread also works wonderfully.
  • Tangy Additions: A spoonful of plain Greek yogurt or labneh offers a refreshing, cooling contrast to the savory greens and eggs.
  • Pickled Delights: Top with homemade pickled jalapeños for a bright, tangy, and slightly spicy kick. Pickled onions are another excellent choice.
  • Earthy Spice: A generous sprinkle of za’atar, a Middle Eastern spice blend with thyme, sesame seeds, and sumac, adds an authentic, aromatic touch.
  • Hearty Sides: For a more substantial meal, serve alongside crispy breakfast potatoes or sweet potato hash. Who doesn’t love some crispy tots with their shakshuka?

Frequently Asked Questions About Green Shakshuka

Can you save leftovers?

Absolutely! While Green Shakshuka is undeniably best enjoyed fresh off the skillet, you can certainly store any leftovers. Simply cover your pan with a lid and refrigerate for up to 1-2 days. For individual portions, transfer any remaining shakshuka to an airtight container. To reheat, gently warm in the microwave or on the stovetop over low heat until heated through. Be mindful not to overcook the eggs during reheating.

Can you use different vegetables?

Yes, this recipe is incredibly adaptable! You can easily substitute or mix different types of greens based on what’s fresh and available. Fresh spinach, kale, Swiss chard, beet greens, or even collard greens all work wonderfully. Beyond leafy greens, feel free to incorporate other vegetables like finely diced bell peppers (red, green, or yellow), sliced mushrooms, or zucchini for added flavor and nutrition. Just ensure they are sautéed until tender before adding the eggs.

Can I use a different type of cheese?

Of course! While crumbled feta cheese is my preferred choice for its briny, tangy flavor that complements the greens beautifully, you are welcome to use other cheeses. Goat cheese offers a creamy, slightly tart profile, while grated Parmesan or Halloumi cheese can also be delicious additions. Experiment to find your favorite!
