Ingredients

  • juice, 1/2 lemon
  • 1/4 cup water
  • 2 tbsp honey
  • 1 tbsp tapioca flour (non-gmo cornstarch works great too)

For the crepes:

  • 3 large eggs
  • 1 cup unsweetened almond milk
  • 1 tbsp butter, melted + 1 tbsp for pan (coconut oil works too)
  • 1/2 tsp vanilla extract
  • 1/2 cup of tapioca flour (you can try arrowroot flour too)
  • 2 tbsp coconut flour
  • 1/4 tsp sea salt
  • 1/4 cup dairy-free chocolate chips, melted (for drizzle)

Instructions

For the cherry filling:

  1. Add the pitted and halved cherries, lemon juice, water, and honey to a medium saucepan. Bring the ingredients to a gentle boil over medium heat.
  2. Once boiling, reduce the heat to a simmer and let the mixture cook uncovered for about 15 minutes, allowing the cherries to soften and release their juices.
  3. Stir in the tapioca flour (or cornstarch) to thicken the sauce. Continue to simmer for another 10 minutes, stirring occasionally, until the cherry filling has reached your desired consistency.

For the crepes:
