With a hand mixer, beat the coconut cream, maple syrup, and vanilla extract until it achieves a light, fluffy whipped consistency. If you don’t have a hand mixer, combine ingredients with a spoon and then whisk vigorously by hand to reach the desired texture.

For Assembling the Parfaits:

  1. Divide the crumb mixture evenly among 8 small (125mL) mason jars or your preferred dessert glasses, gently pressing it down to form a base layer.
  2. Spoon or pipe a generous layer of the prepared coconut whipped cream over the crumb base in each jar.
  3. Artfully arrange a mix of fresh strawberries and blueberries on top of the cream layer. Repeat the layers if your jars are deep enough, or finish with a final flourish of berries.

*To get the best coconut cream: Place two cans of FULL FAT coconut milk in the fridge to sit overnight. Crucially, do not shake the cans before chilling. The cream will separate into a thick layer at the top of the can. Carefully scoop out this cream, discarding the watery liquid underneath.
