Sweet & Savory Balsamic Chicken Salad with Fig Portobello and Candied Pecan Medley

We’ve all been there – that moment of pure culinary bliss followed by a whisper of delicious regret. The heartfelt comments and shared experiences on yesterday’s post truly resonated with me, and I deeply appreciate all your kind words. It’s incredibly comforting to know we’re all navigating the delicious, and sometimes challenging, complexities of mindful eating together. Your support seriously makes this community the best!

While I generally advocate for a balanced approach to eating and try to avoid strict food bans in my home, there’s an exclusive category of foods that poses a significant challenge to my self-control. These are the items I simply cannot keep in the pantry without devouring them in what feels like a single sitting. For a long time, this formidable list included crunchy granola and savory popcorn, both powerful in their capacity to disappear without a trace. However, I can now officially, and somewhat reluctantly, add a third item to this elite group of irresistible treats: homemade candied pecans.

The Irresistible Allure of Candied Pecans and Mindful Indulgence

My most recent encounter with these sweet, crunchy delights was, shall we say, a profound learning experience. I had meticulously prepared a generous batch of candied pecans, intending them solely as a flavorful topping for the Balsamic Chicken Salad recipe I’m sharing today. In my mind, I was being exceptionally virtuous, combining something inherently indulgent with a wholesome, nutrient-rich meal. My logic, perhaps flawed, dictated that the health benefits of fresh greens, lean chicken, and vibrant figs would somehow “even out” the candied nuts, creating a perfectly balanced dish.

However, upon honest reflection, and with a slight cringe looking back at these very pictures, I realize the reality diverged a tad from my virtuous intentions. What transpired was less a salad with pecans, and more a bowl brimming with candied pecans, accompanied by a modest side of green salad. The memory of that uncomfortable level of fullness, having consumed nearly the entire batch in a single day, still makes me wince. This experience served as a potent reminder: next time, prepare only the precise amount needed for the recipe. Portion control, especially with something as utterly addictive and delicious as these candied pecans, is indeed key to enjoying them responsibly and without regret.

Pecans on the Rise: The Trader Joe’s Enigma and Homegrown Dreams

Speaking of pecans, you might have noticed their prominent resurgence in many of my recipes and discussions recently. There’s a perfectly good, if slightly amusing, explanation for this pecan predilection: my latest adventure to New York City involved a strategic, and highly successful, visit to Trader Joe’s. This retail haven invariably leads me to over-purchase their incredibly affordable nuts. It’s a recurring mystery to me – how does Trader Joe’s consistently manage to sell their high-quality nuts at such competitive prices when other grocery stores simply cannot compete?

This enduring enigma often leads my mind down a rabbit hole of whimsical, if impractical, ideas. Perhaps I should consider a career change and delve into agriculture, specifically cultivating my own nuts! But then the immediate, practical questions arise: Can I, a city-dweller, actually grow nuts? Are we talking about large-scale tree nuts that require acres of orchards, or is there a more manageable, urban-friendly approach to cultivating these nutritious powerhouses? The thought process quickly devolves into delightful confusion, a testament to the allure of a good bargain and the ambitious, albeit naive, dream of cultivating one’s own delicious ingredients.

The Revelation of Fresh Figs: A Delightful Culinary Awakening

Another fascinating culinary discovery, almost as confusing as my nut-growing ambitions, has been the existence of fresh figs. It might sound utterly ludicrous, but for the longest time – until about a year ago, in fact – I genuinely believed figs only came in their dried form. The sheer revelation that they could be purchased fresh, plump, and vibrant, before undergoing the desiccation process into the “dried figs” we’re all so familiar with, completely blew my mind. Was I truly the only person living under this particular culinary rock? How I managed to miss this fundamental botanical and culinary fact for so many years remains an absolute mystery to me. I’ve certainly never claimed to be the smartest person around, though I do playfully embrace the title of a “know-it-all.” It turns out, you don’t actually need to know *everything* to claim that title; you just need to project an air of confident, albeit sometimes misplaced, certainty!

But seriously, the pure joy of discovering fresh figs, with their delicate, honeyed sweetness and unique, slightly chewy texture, has been a game-changer for my salads, breakfasts, and snacks. They add such an exquisite, almost luxurious, touch to any dish. Their seasonal availability makes them a special treat, and they particularly complement the savory notes of roasted portobello mushrooms and the tangy balsamic chicken in this recipe. The contrast they provide against the creamy goat cheese and crunchy pecans is simply divine, elevating a simple salad into something truly special and memorable.

Crafting the Perfect Balsamic Chicken Salad: A Gourmet Experience

This Balsamic Chicken Salad is far more than just a casual meal; it’s a meticulously crafted symphony of flavors and textures designed to delight your palate and nourish your body. Each component plays a vital role in creating a harmonious, gourmet-inspired dish that’s surprisingly straightforward to prepare. It’s an ideal choice for a satisfying weeknight dinner, a sophisticated lunch that will impress, or even as an elegant dish when entertaining guests who appreciate fresh, vibrant cuisine.

The foundation of this exquisite salad begins with tender, succulent chicken breasts. They are first marinated in a perfectly balanced mixture of tangy balsamic vinegar, rich olive oil, a hint of spicy Dijon mustard, and fragrant minced garlic. This marinade infuses the chicken with a deep, savory sweetness that caramelizes beautifully when baked, creating a succulent and aromatic protein base. An ingenious touch involves baking the chicken atop sliced portobello mushrooms, allowing the mushrooms to absorb all the delicious marinade drippings. This process transforms them into rich, earthy complements that add a hearty, umami depth to the salad, enhancing its overall flavor profile and making it wonderfully substantial.

The true star ingredients, beyond the perfectly cooked chicken, are undoubtedly the fresh figs and those utterly captivating candied pecans. The figs, especially when ripe and in season, offer a delicate, honeyed sweetness and a soft, slightly chewy texture that contrasts wonderfully with the crisp baby spinach. Their elegant appearance instantly elevates the dish, bringing a touch of Mediterranean sophistication to your plate. And of course, the candied pecans – these little nuggets of sweet, salty, and crunchy goodness provide an essential textural counterpoint, ensuring that every bite is an exciting and multi-layered experience. While I still maintain my newfound resolve to only make a small, controlled batch next time, their contribution to the overall depth and enjoyment of this dish is undeniably significant.

Finally, crumbled goat cheese introduces a creamy tanginess that beautifully cuts through the richness of the nuts and mushrooms, adding another layer of complexity. A simple yet incredibly flavorful homemade balsamic vinaigrette ties all these vibrant elements together. This dressing, with its balanced notes of olive oil, balsamic vinegar, Dijon mustard, and a touch of golden honey, coats every leaf and ingredient, ensuring a cohesive and utterly satisfying salad experience. This recipe truly embodies balanced eating: fresh, wholesome ingredients elevated by thoughtful preparation and a few indulgent accents that make healthy food feel like a treat.

  • Cook Time: 40 minutes
  • Total Time: 50 minutes

Ingredients

Scale

For the pecans:

  • 2 cups whole, raw pecans
  • 2 tbsp coconut oil, melted
  • 2 tbsp coconut palm sugar
  • ¼ tsp sea salt

For the chicken:

  • 2 chicken breasts, boneless & skinless
  • ¼ cup balsamic vinegar
  • 1 tbsp olive oil
  • ½ tsp Dijon mustard
  • 1 garlic clove, minced

For the salad:

  • 45 cups baby spinach
  • 3 fresh figs, sliced
  • 2 portobello mushrooms, sliced
  • ¼ cup goat cheese, crumbled

For the dressing:

  • 2 tbsp olive oil
  • 1 ½ tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey

Instructions

For the pecans:

  1. Preheat your oven to 325 degrees F (160 degrees C).
  2. In a medium bowl, combine the whole pecans, melted coconut oil, coconut palm sugar, and sea salt. Toss thoroughly to ensure the pecans are evenly coated.
  3. Spread the coated pecans in a single, even layer on a baking sheet lined with parchment paper or a silicone mat.
  4. Bake for 15-20 minutes. It’s crucial to watch them closely, as the sugar can caramelize and burn quickly. They should be fragrant and lightly toasted.
  5. Remove the pecans from the oven and let them cool on the baking sheet for at least 10 minutes. They will become delightfully crisp as they cool.

For the chicken:

  1. In a shallow dish or a resealable bag, combine the balsamic vinegar, olive oil, Dijon mustard, and minced garlic. Add the boneless, skinless chicken breasts and marinate for at least 30 minutes, or longer in the refrigerator for deeper flavor (up to 4 hours).
  2. Preheat your oven to 400 degrees F (200 degrees C).
  3. Arrange the sliced portobello mushrooms evenly along the bottom of a baking pan.
  4. Place the marinated chicken breasts on top of the portobello mushrooms. Pour any remaining marinade from the dish over the mushrooms and chicken to ensure maximum flavor absorption.
  5. Bake for 10 minutes.
  6. Carefully remove the pan from the oven, flip the chicken breasts, and return to the oven to bake for another 10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees F (74 degrees C).
  7. Once cooked, remove the chicken and mushrooms from the oven. Allow the chicken to rest for a few minutes before slicing it into bite-sized pieces.

For the dressing:

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey until thoroughly combined and emulsified. This can also be done by shaking vigorously in a small jar with a tight-fitting lid.

For the salad:

  1. In a large serving bowl, combine the fresh baby spinach, crumbled goat cheese, ½ cup of the prepared candied pecans (reserve the rest for another use or snack!), the roasted portobello mushrooms, and the sliced balsamic chicken.
  2. Drizzle generously with the homemade balsamic dressing and toss gently to ensure all ingredients are coated and well-distributed. Garnish the salad with the freshly sliced figs just before serving. Serve immediately to enjoy its vibrant freshness and balanced flavors.

Notes

The recipe for candied pecans yields approximately 2 cups, which is more than the ½ cup needed for this salad. However, the extra pecans are a bonus! They will keep beautifully in an airtight container at room temperature for up to one month, making them a fantastic make-ahead component or a delightful snack (if you have better self-control than I do!).
