So, rest assured, your deepest secrets are generally safe, not because they’re being guarded intensely, but often because they simply don’t fit the narrative of a food blog. #truth

Of course, there are a select few who make regular appearances here, always with prior consent or because they are family and good sports about it! My partner, C, is a frequent presence, as are my supportive parents. Occasionally, a friend might be mentioned, though more often than not, I use a pseudonym or their quirky nicknames to protect their identity while still sharing a fun anecdote. People envision my kitchen overflowing with an endless bounty of delicious dishes, picturing me living amidst a constant feast. They’re often surprised when I tell them:

  1. I currently have no food in the house. Yes, even food bloggers experience empty fridges!
  2. I’m not morbidly obese from all the food I supposedly have laying around.

When you break it down, I might post three new recipes a week. However, there are 21 meals in a week, plus countless snacks. So, just like everyone else, I still have to plan and prepare meals for those 18 other weekly opportunities, and then some! C and I share most of the food I prepare for the blog. *Note on spinach quantity: This might seem like a lot, but baby spinach wilts down dramatically. You’ll be surprised how quickly 20 cups turns into a manageable portion! I can easily enjoy half a batch in one sitting.

Instructions

  1. After soaking, drain your raw cashews thoroughly. Combine the soaked cashews and vegetable stock in a food processor or high-speed blender. Blend until the mixture is completely smooth and creamy, with no cashew pieces remaining. Stir in a pinch of nutmeg for a warm, subtle flavor. Set aside.
  2. Heat the olive oil in a large pan or Dutch oven over medium heat. Add the finely chopped onion and sauté gently for 3-5 minutes until it becomes translucent and softened, releasing its sweet aroma.
