Ingredients

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp olive oil, divided
  • 1 large yellow onion, diced
  • 3 celery stalks, chopped
  • 2 carrots, peeled & chopped
  • 1 garlic clove, minced
  • 6 cups chicken stock
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cup uncooked orzo
  • Zest + juice, 1 lemon
  • 2 tbsp freshly chopped parsley

Instructions

  1. Add 1 tbsp of olive oil to a large stock pot or Dutch oven over medium heat.
  2. Add your chicken thighs to the pot and brown on each side (5-7 minutes total). It’s okay if it’s not cooked all the way through; you just want to brown them. Remove from heat and set aside.
  3. Add remaining 1 tbsp of olive oil to the pot and sauté your onions until translucent.
  4. Add in celery, carrots, and garlic and sauté for 2 more minutes.
  5. Add your chicken stock, thyme, salt, and pepper and bring the soup to a slow boil.
  6. Lower heat to a simmer and add the chicken and any juices back into the soup.
  7. Simmer for 15 minutes.
  8. Using tongs, remove chicken thighs and allow to cool slightly on a cutting board.
  9. Add orzo and lemon zest and juice to the soup and cook for 10-12 minutes or until the orzo is cooked al dente.
  10. Once chicken has cooled, use two forks to shred the chicken and then add it back into the soup.
  11. Top the soup with freshly chopped parsley and serve hot.
